In a large pot, cover the cashews with boiling water for 10 minutes. Line a bread loaf baking pan with parchment paper and set aside.
Add the curst ingredients to a blender and pulse until the mixture comes together, about 1 minute. Press mixture evenly into the bottom of the pan and place in freezer while you prepare the cheesecake layer.
Add cheesecake ingredients to a food processor and pulse until smooth. Pour the cheesecake mixture over the crust in the baking pan and spread evenly. Freeze for a minimum of 2 hours.
Cut cheesecake into squares or bite-size pieces before serving. Store covered in freezer up to 3 months.
